Kolsch-Style Ale

Kölsch is a style of beer named for the city of its origin Cologne, Germany (or Cöln/Köln), a word which traces all the way back to the Roman colonial era. Connoisseurs find it one of the most delicate and perfectly balanced beers in the world. The Kölsch Konvention (a real thing) defines their beer as “light, highly attenuated, hop-accentuated, clear, top-fermented Vollbier.” In The New World Guide to Beer, Jackson adds “a definite, but only slight, fruity-winy bouquet...also a gentle hop dryness in the finish, flowery but less effusive than a Pilsener.” Our reproduction ticks all those boxes by using authentic ingredients and techniques from Cologne.
